In my opinion in my smoker 1/4 thick does really well and really holds heat. But, my smoker is pretty thick and heavy so they work well. My charbroil offset that I used before this one had a convection plate that I made that was 1/8" and did well. That smoker isn't as big as my current smoker...

Just bought two prime ribs for 50% off! I have a problem. My vacume sealer won't fit them to freeze them. Have put them in large freezer bags until ready to smoke. Did I do the right thing?
Good morning! I know when I used my Charbroil I had it down to about a chimney and a half of charcoal to start, and then added a chimney of lit charcoal about every hour to keep the temp up. Those things are pretty drafty so that time varies quite a bit. Looks good on the deck by the way! 128077
Got the pipe from Galloup. It's a piping company in Kalamazoo and Grand Rapids. They have mostly 20" pipe. I wanted 24 but I guess they don't get it that often. Hard to find around our parts. It was and is fun making it. I'm almost done with mine.
