    Brisket Time Again

Been awhile since I smoked something with everything going on. Found a great place that has decent meats so I picked up a 15+lb baby. Using a simple SPOG rub just prior to putting in my MES40. Pellet tray filled with Hickory on the first 2 rows and apple in the last row. Started at 9:30pm...

Isopropyl alcohol (99%) for lighting pellets in a tube

Ha. By time the pellets are soaked then put in the tube. My torch lit my pellets and I'm off and smoking 5 to 10 minutes later. It takes 1 minute to light the pellets and I've never had a problem with them going out.

    Chuck Roasts Tonight and Veggie

Thanks everyone. Not smoking as much as I want to these days. Some things had to be put on hold sort of speak. When I do get a chance to fire up my smoker I try to make everything work out right. The adding in the French's worked out good with the brussel sprouts. I'd do it again. They have a...

    Chuck Roasts Tonight and Veggie

Always love doing Chuck Roasts in the smoker. For some of the cheaper meats. If done right you can bring out a lot of flavor/tenderness from them. Today I did 2 of them. Both rubs are from Jeff. One was done with his Original rub and one with the Texas rub. I tend to use the original more often...

    Berkshire Baby Back Ribs Tonight

Picked up some baby back ribs during the week. Smoked them in the Highland instead of my MES. Used hickory logs. Went with 2-2-1 for the time. What a tasty dinner. Two different bbq sauces used. One store bought and one homemade. Store bought below. Homemade the best. Just mixes real good...

Pulled Pork butt for dinner tonight

While at the store during the week I came across a pork butt from Smithfield. I'd be lying if I said i got it at a good price. With whats going on. The stores by me are select on what you might find. So I figured on doing some pulled pork for dinner. Wasn't a big one. Weight was just 6.04lbs...

Babe in the woods - Memphis Pro?

If I had buddies that could do masonry work. I'd build my own. Check out what others have done in here. There are some nice ones in here. You don't have to be a rocket scientist to come up with a cool working unit. Decide to cold smoke at some time. No having to buy a extra piece of equipment...

    No TBS

Pull it from the can and see if its giving off the white smoke or TBS. Can never have too much air going to the pellets. Are you filling up your pan with water and seeing it from that? Like Winterrider asked. Vent wide open?

    MES 40

I own both. 30 even with issues that they have is still going strong. Controller and element still original. Love my sportsman's 40 by masterbuilt. But never used my AMNPS in either. I have the mailbox mod done on both. I have read in other posts to pull the chip loader out some letting in more...

    Sad Day at HalfSmokes House

Its always a sad day when you have to say goodbye to a loyal friend. All they ever want is for you to be there and give the simplest of things. A pat on the head. A belly rub. My heart goes out to you and your family.

    Chuck Roast For Dinner Tonight

While scouting for meat at the grocery stores I actually came across some decent chuck roasts on Saturday. So I decided to go ahead and smoke these puppies in my MES40 for Monday's dinner. Enjoy! My plate here. I top it with my bbq sauce to complete it. After smoking i put it in a cooler to...

    Temperature

I use my pellet tray. No need to worry about any temp. Light it and leave it. Did the mail box mod like most. Later on I gutted my 40 and added in this. Never regretted doing that to the unit.

1st full packer disappointed (pic heavy)

Hell yeah. My first one came out nasty. Trusted a family member. Used mesquite all thru the cook. Found I'm not a fan of over smoked meat using that wood. Best rub I found was just simple salt/pepper for me. Made many good ones since then. Best practice i found for me was wrapping up and...

Center Cut Pork Chops Off The Weber

Found a nice pork loin at the store today. One of those no hormones etc all natural. Had some nice running thru it. Cut about 1 inch chops and seasoned using Jeff's Texas rub then in the fridge for couple hours. Got the weber going and put them babies on the grill. Potatoes are in the foil...

    Simple 3-2-1 Ribs tonight

Just going back to basic spices used before going into the smoker to begin its transformation into delicious food. Nothing special on spices. Just pepper, onion/garlic powder and hickory pellets from lumber Jack's premium brand. Just on the last hour used my homemade bbq sauce. Fried...

    Wagyu Brisket from the MES40

What a dinner. This by far is the one of the best I've eaten. Meat was so tender that a knife wasn't needed. The smoke wasn't too overwhelming covering the taste of the rub. Everything blended really good together. At first I added in my bbq sauce on top of the pieces on my plate. Mistake...
