    My First Brisket Cook!

I reckon you might be right. It wasn't so much crumbly as it was 'tight' - if that makes sense! Really need to remember that for next time, I think I'm quite worried about overcooking such an expensive piece of meat. I was using Pecan but just bought some Hickory, Maple and Cherry pellets!

First 'Proper' Smoker Incoming (Traeger 575 Pro)

Just wanted to throw a quick update in here... I'm converted! The grill was great - held temperature really well and it was such a nice change not needing to check up all the time, whilst still being able to get an awesome smoke on the go. The only downside I can see is that the pellets are...

Hello from across the pond, in the UK! I'm very envious that you're in Texas - I'm a huge fan of the low-and-slow style of cooking and am early in my journey. I've just cooked my first brisket this past weekend! Looking forward to seeing what you're cooking up.

    New from Nor Cal

Hello from the UK! My son's about to say his first word any day now - I'm gonna have to make sure it's "barbecue" :emoji_laughing: I'm just getting started on my journey so it sounds like you might be able to help me out! Looking forward to seeing what you're cooking.

    My First Brisket Cook!

That sounds like a good idea - would I then place the brisket at the point of the 'V' shape? Thank you, but not yet at the level I want. When I get it to a good point, I'll throw it as far as I can. :) Towards the end, I had a probe in the flat and pulled at 190°F so you might be right. The...

    My First Brisket Cook!

Hi all, As you might have seen from other topics I've posted, I had planned to do my first packer cut brisket this weekend. I've posted most of this over on my Instagram so I'll keep it short and only include the good bits! I woke at 5am to prep the brisket and warm the smoker. By 6am...

3-2-1 method for spare ribs ended up with dry ribs. What to do?

I'm certainly no pro, but I found (like many others) that 2 hours wrapped was bit too much for spare ribs. I only wrapped them for 2 hours before checking and then resting - they didn't need that last 1 hour unwrapped as I wasn't saucing them.

First 'Proper' Smoker Incoming (Traeger 575 Pro)

Will do - I'm already reading the manual (like a proper nerd) and it suggest doing a burn in for 10 minutes on low heat, and then ramping it up for 30 minutes. Worried that it's going to end up using a lot of pellets, but it'll be worth it in the end. About to order some brisket and bone-in...

First 'Proper' Smoker Incoming (Traeger 575 Pro)

Hi all, Well, I just placed my order and will be receiving a new smoker this Wednesday - a Traeger Pro 575! I placed my order with Meat & Cleaver in the UK and also ordered some Pecan pellets to get started. I'll also be ordering a brisket and bone-in pork shoulder, as well as some Traeger rubs...

What makes a good BBQ video?

Thank you to everyone who responded, it really does mean a lot. I took a lot of the advice and implemented some of it (if I tried to do it all, the video would be coming out in 2020 :emoji_laughing:) but here it is for anyone who's interested. I hope future videos will continue to improve and...

    Cook #2 - Spare Ribs

I'm back again with my second attempt at making some good American-style BBQ with spare ribs! You can watch this video on YouTube by searching for 'Exclusive BBQ' and finding my channel! I started off with making my own rub (recipe here or down below): I then applied it to the ribs after...

What makes a good BBQ video?

From what I can see, the 'magic formula' for an engaging video does seem to be keeping it minimal and informative. Perhaps my rambling vlog-style videos need to die an early death. :emoji_laughing:

What makes a good BBQ video?

Hi all, I've just uploaded my first BBQ video to YouTube and whilst I didn't invest anything more than my time in the production value, I did want to try my best to make something that people wanted to watch and would be useful. Whether I ticked those boxes, only time will tell, but it got me...
