    Thanks! I’m actually from Louisiana as well. Born in Metairie, lived in Kenner until I was 5. Parents are from Hammond and Covington. First flying job was out of New Orleans, and I flew to Houma 5 days a week.

    Understandable. Yep, I think long rest/holding is a huge and underrated key to great brisket. Well, not underrated around here, anyway.

    Oh, I meant to say as well that after only 5 hours in the smoke, I am pretty happy with the bark. I do like the additional time in the pit, however, for some more smoky flavor.

    Started a brisket Tuesday at 3 pm with the usual plan. Smoke until around 10 pm and then in to the oven to finish for another 4-5 hours. Well, as I noted on another thread, I am an airline pilot. A premium open time trip that was so good I couldn't pass up caused me to halt the smoking process...

    Thank you, I appreciate hearing that! I have done that flight a few times. I'm commuting to Atlanta right now. I hate commuting. It will be great to be back in Fort Worth and drive to work.
