This will be the 3rd time that I have typed out this post. Hit the back button when I wanted to change tabs and my work internet timed out the 2nd time. Here goes again...
My fiance's dad had brought home a case of polish sausages from the affiliated foods midwest employee store. He basically...
This had to be the best ever Thanksgiving, for a number of reasons. Smoked my first turkey in my ECB, and it turned out gorgeous! It was a 12# youngling that I rubbed with Tony Chachere's Creole seasoning and injected with the Creole Butter. That bird smoked (no pun intended) my dad's bird that...
Ever grill a salmon steak, only to ruin gorgious sear marks when it came time to flip? Worry no more, as I have a solution for you!! Read on...
So a co-worker of mine recently returned from an alaskan fishing outing with his dad and his son. He returned a rich and heavy laden man, toting a box...
I drool at the memories...
These two beaut's were the most succulent pieces of meat I've ever smoked. They also caused me the most trouble! After 14 hours they were just around 155*. There was a nice wind that decided to swing in as soon as I went to take a nap which lasted a little over 4...
If I were you, (and if I had a meat slicer/electric knife) I would slice it reeeeeeeaaaaaaaal thin. Then I would set those slices into a bit of simmering au-jus. Slice some crusty italian bread in half then set under broiler to toast. Layer your jus-ed beef and swiss on the bread and then...
Where do you guys get the netting? Do I have to go to a local butcher or is it possibly somewhere obscure at wally world? I have honestly never seen it. I don't have a Cabela's within 3 hours of me either, so online possibly? Where's the best place?
I can't see the point in this either? I understand that it brings money to local economy, but I thought that giraffes weren't on a game hunting list....I'd take down a white tail or muley any day, but a giraffe? That's like taking down an albino deer. I just couldn't do it!
What you do is go to Gamestop, buy a couple of those cooking games, and as long as you return them within 7 days, you won't get penalized for 'not likeing them'. This being said because my brother happens to be the manager of our local Gamestop. Otherwise, I would definatly recommend Mario Kart...
Oh! Smoked in 4 1/2 hours, using cherry. Didn't have another thermometer to moniter temps, as my grate level therm was busted after a different smoke. It was in the lower 3rd of Ideal on the well known innacurate ECB guage.
So here it is. I've posted enough of I'm gonna do this, I'm gonna do that, without posting any qview. Yes, I did take plenty of pictures of my smokes, but, I'm just a bit lazy. So! Here's my first turkey done on a beautiful day with an un-modified ECB. Used a sand bowl and an electric element...
That'd be good ol' AB. Alton Brown, that is. Apparently they've never fried their own turkey's, 'cause why would you fry a frozen bird..and why would you dump it in the oil from 6 ft away? I've always had better luck with live turkey's and my head right above the oil. In my folks' kitchen.
So I recently acquired a 10 lb turkey from my FIL. I'm thinking about boning out the breasts, tying them or butterflying and tying them together, then curing into a ham. How many days per lb or should I treat it like making canadian bacon. Any recipe ideas..?
So here I am, deciding that I should probably show my brother how well I could use that ECB he got me for my b-day..by cooking for his b-day. I'm already smoking 18 lbs of pork butt in one smoker, but I want some burnt ends to liven up some beans. If I buy a brisket, I want to just get a couple...
..Nebraska Huskers that is..
I'm a noob to posting, but not the site, or smoking in general. I'd say that I have a good start on smoking, as I have several pounds of pork and poultry under my smoke ring/belt. Just got done with smoking a 15 lb pork loin and a 6 lb chicken a couple hours ago...
