    Chicken & Fatty 4/7

I put a 4+lb chicken and a fattie in the smoker two hours ago. Fattie is about ready to come off. Chicken is at 141°F and smokin at 270°F for another hour or so. I picked up the chicken this afternoon so I did not have time to brine it. Used a rub inside and out. Was gonna smoke at 225-240°F but...

    Strange Way To Smoke Chicken

I've done the same thing a couple times with whole 10lb striped bass in the salt dome (as the recipe called it). It takes a load of salt to cover a 30" fish, but it's pretty good. You can get every piece of meat off the fish by just lifting it from the bones. Make sure to leave a small hole for...

    Hello from Long Island

Thanks! I'm registered on that site as well, but I haven't browsed beyond specific topic searches that I've done. Load's of info and I love the "roadmap" sticky thread. I have to work this weekend anyhow. Enjoy and don't forget to share some tips you learn with us! Jim

    Pulled pork and ribs

I'm still kinda new at this myself and have yet to smoke some ribs. Also, I have not smoked more than one meat at a time. I have thrown some of Dutch's wiked baked beans and some ABTs in while smoking though. The first butts I did were 6lbs each (before being trimmed) and cooking at 225-250°F...

cured my desire for a gosm

There are several threads in the Propane Smokers section about the GOSM's from WalMart. They are not the same quality which is why they are at least $50 cheaper than everywhere else. The best deal is right here in Jeff's smoking-meat.com store (through amazon.com) - $189 no tax, no shipping...

Live! 3/23 - First Turkey Smoke

Guess I got really lucky on my first attempt at smoking a turkey. It was moist & juicy and had a nice smoke flavor. The smoke ring, especially on the drumstick I just devoured, was pronounced. Next time, I'm going to try all cherry smoke!

Live! 3/23 - First Turkey Smoke

My aunt gave me a 12lb turkey she's had in the freezer since last Thanksgiving. Figured it would make for a nice first turkey smoke! Gonna need some practice before I make one for the family, possibly for Easter. Thawed the bird out in a bucket of water for 6+ hours, and then brined it...

First Brisket Questions (And other questions that may not belong in this forum....

Can's say for sure in your area, but around me I cannot find chunk wood other than hickory or mesquite. In a pinch, I bought apple chips from a local BBQ/grill store. Many hardware stores carry the chips as well. I soaked the chips for 20 minutes and used it along with hickory chunks. I have...

    Wood suppliers in Canada ?

I'm going to have 120lbs of Hickory/Mesquite wood chunks shipped from BassPro Shops for US$47.88 plus $7.95 shipping - that's not high shipping in my book ($.06625 per pound). Total cost per pound is $.47 - pretty cheap!

On a fishing discussion board that I frequent, I met a guy from Hawaii that uses coffee, mango and guava wood for smoking.
