I'm doing the 3-2-1 and it doesn't fall off the bone. Once at 225 and once at 250. Should I be doing it more like 4-3-1?- powersmokin

I'm not sure how chipotle would taste.. maybe on a mexican thing, but chipotle might taste out of place. The ribs turned out well, but I think I might add more brown sugar next time. It was a little too... spicy and noot sweet enough.- powersmokin

no pics of the TBS because it was 12:15... But. Heres some pics of the meat and showing just how far off the stock thermo was! (i dont want to hear about any of you getting turned on by this!! LOL!)
