What to do with these ugly rims on my smoker

So you mean I've been sweating needlessly using 10 ply takeoffs on my stock trailer for the past 15 years.

Juicy Smoked Rib Eye Steak W/Qview

DITTO. It's pretty damn royal up here too. The cut by which the whole is judged. My favorite also. Great looking steak Ron.

    Heating Element

I have a buddy who used an electric skillet and he had good luck with it. I think it is worth a try for what little investment you'll have in it. Plus you'll have a control. I have been using a Brinkmann conversion element with very good luck, temps up to 250, for 3 years. I've heard of others...

    Nasty Snack Sticks

I wasn't gonna post this, but you gotta take the good with the bad. Heres the snack sticks from my faulty casing project. I used a third venison with 2 thirds pork butt. Leggs seasoning. The final product ended up looking like licorice ropes, and the cut sticks looked like twizzlers. The uneven...

    1st attempt venison salami QUESTIONS.

I have substituted plain old sugar for the dextrose, and low fat powdered milk for the soy. Not used any of his recipes that called for corn syrup solids. I can't say my substitutions were better, but the finished product turns out good, and they are ingredients that are much more readily...

OMG Guess Who Knocked On My Door Tonight ? Mr. Yoshidas The Real One What An Honor

Don't know how I missed this post, but big congrats Ron, slap on the back, and punch in the arm. Nice to know corporate America listens to common sense sometimes. Now I'm gonna go try it just on account of your recommendations and the fact they did this. Sam's club carries it for any that can't...

    Finally, got bacon

You know, I'm really hard pressed to tell a difference between them. I spose sweet is sweet. The maple might have been better if I'd had real syrup or perhaps extract, still good, just no particular maple flavor. Thanks all for the compliments.

    Wal Mart or Sams ?

Not to mention all the other neat crap I seem to find there that I can't live without. You just gotta remember to get a big shed to store it all in, since it all comes in BULK. Seriously, great place to buy the stuff you gotta have, toilet paper, paper towels, kleenex, napkins, etc. It just...

    Wal Mart or Sams ?

Yes, I think so. I think Sam's meats are far superior to WalMart. Doesn't make sense since it is basicaly the same company. I don't like WalMarts meat or produce, either one. Sam's totally different story.

    A Good Day For Cheese.

Yep 2 weeks at least. I opened mine this past weekend, and it's even better tonight on cheese burgers. Just seems to get more and more mellow, less harsh. Careful with those molars. Don't want to get dry socket. I had my wisdom teeth out 5 years ago. The doc said no alcohol, no citrus juice, no...

Considering a Meat Grinder, Need Advice

You can grind a lot of meat, even by hand with a number 32 grinder. I used one for about 5 years. It has to be the regular crank, not the crank on the pulley style. Just too short of a throw. You do have to coarse grind first, then fine. You can get pullies for the regular one later on if you...

    Interesting Twist - Summer Sausage

I'd keep it cool too. Even without the buttermilk, it should be at refrigerator temps til smoking time. I've heard of using regular buttermilk for this effect. Sounds interesting. I'm anxious to hear how it turns out.
