    Love my Pit Boss. Only thing as I'm sure you know and probably already have is a thermometer not from the grill unit. I have two different inkbird thermometers. One four probe wired and one four probe wireless.

    Bare bottom on gates will look gnarly. Try to get it off if you can otherwise try to mix it in. Some people(especially in my family) love those burnt ends. Remember they are people who love everything. It looks great to me. Very nicely done.

    I love those gates. A bit spendy...eh maybe. Quality of the cooks has gone up though. Wings with the vortex... yup bring em on. This steak, yeah pretty damn decent.

    Personally I would leave it covered and bump up the temp. It's got it's flavor. Hell finish it in the oven at 350 if needed.

    Bear Mountain has good pellets that give good smoke. I've read that the Traeger pellets is an oil of some sort out get the flavor instead of through smoke. I don't recall the exact discussion it was in but read it on here a while back.
