Mine do as well. They work great for me. Will plow right through when spatchcocking a turkey. Mine don't do well with cutting skin but probably because how I've used them.
Give it 3-5 days in the fridge. At 5 it should be completely thawed. Depends on your fridge temp of course. If I give one 3 days it's still somewhat frozen in the center for me but it's no big deal. It will finish thawing real quick at 250 plus. Comes out great every time.

Using a wet brine at 2% do you have to worry about a commercial rub making the chicken too salty in the end? I've always dry brined pork and beef but would like to give wet brining some spatchcocked chickens a try.
On my pellet grill.... hot and fast for sure.
In the kettle I've cooked many many low and slow and then over the coals for char. No wrong way with chicken legs! It's always good.
