    Potato soup recipe?

Thanks for posting those recipes TW - I think I'll be giving your 'house' recipe a try here very soon. Only difference is I'll try making it in a DO in the smoker see how that goes. Thanks again, Tom

Nice presentation man! The smoke rings are very appealing. I have yet to make a chuckie - after seeing this, I'll bump it higher on my to-do list. Thanks for sharing, Tom

1st butt of year, Q-view, and question

If you really don't want to finish the butt off in the smoker, you could put the butt on the top rack in the oven and put something underneath it on the bottom rack to catch the drippings. Use only the bottom heating element and let it cruise at 275-ish. Maybe even 300*. Tom

1st butt of year, Q-view, and question

Hey pimp, I don't know if this is what happened to your shoulder but I had a couple of similar experiences where the temp was right and the dang thing fell apart but still had a lot of grease. I mean the kind that sticks to the roof of your mouth - yekh! Anyway, I started smoking the picnic or...

    Baby backs...in memory of Curt...

My humble condolences go out to you and the family. My dad passed away a couple of months ago and it was pretty tough on us at first. He was a breakfast master so we often remember him when one of us makes one of his dishes for breakfast. Once again, my thoughts are with you and the family. Tom

    What should I smoke?

why not slow smoke some beef and/or pork ribs?? The beefies will keep you busy for a good 7 hours if you take it slow. Babybacks will run you around 5 or 6 hours. Plenty of time to relax and catch a nice buzz. A fatty wouldn't be a bad idea either. If it was me, I'd buy some beef skirt (fajita)...

    your help wanted

I don't know what kind of smoker you're running but I've smoked a few pizzas on a homemade vertical. First off, try to pre-cook the meat toppings if you can. Actually, you almost have to. Second, if you live in an arid climate, I'd suggest running with a water pan or put a pot of beans between...

Spares, pork loin, and a fattie.

Hi SnowCapn, sounds like you're off to a smokin' good afternoon. I love pork with pineapple. Never tried it with a loin (haven't done a loin yet) but I have done Hawaiian style baby backs. Mmmm...... Looking forward to some QVIEW, Tom

    Smoked Chicken with Q-View

Hey Cajun, the chicken looks pretty darn good. I have a couple of questions though. 1) What's the foil for and 2) How's that JM stuff taste? Spicy? Sweet? etc... Thanks for the QVIEW, Tom

BBQ Challenge Biscuits and Gravy - Lots of Qview

Wow, my wife just put that on my to do list LOL. Man it looks delicious! I haven't had bisquits & gravy in a couple of years and that was at a diner. Nice pics and POINTS to you for chalking another one up on my to-do list. Tom

    Searing and smoking.........

I'm with zzeru, I've never experienced any benefit to searing prior to smoking. On the other hand, searing AFTER smoking can do wonders for flavor and appearance - especially on beef and some cuts of pork like chops. As to your dilemma, if you've got a griddle and can get it really hot on the...

    Lacajachina

Hi Yankee, you misspelled the link. It should be www.lacajachina.com and is also known as an 'ataud' which translates to a casket. The better built ones are great because you can roast just about anything inside the cavity while using the same heat source to grill items on top. The drawback? No...

BB's, Beef Ribs, Fajitas and beans QVIEW

I didn't know which category would be most appropriate for this qview so beef it is. My wife and I had a craving for some smoked ribs (BB's/Beef) or fajita tacos. We couldn't decide so I made a little of all 3 plus beans. I put the beef ribs and the fajitas in a ziplock with my marinade and let...
