    trimmed butt?

    I never have trimmed the fat/fatcap off. However this past weekend the pork butt I picked up didn't have the usual fat on it. It still came out great and I had more bark to it then when there is alot of fat that I just end up taking off anyway at the end of the smoke.

    I generally don't put any bbq sauce on the pork. I'll let my guests decide what sauce to use if any. I'll put the sauce on the side. Now one of my favorite sauces is Pappy's White Lightening. Not too thick and has a great flavor.

    Gyro Meat

    Oh my stomach is growling now. I have made that recipe of AB's a few times. Guess it wasn't a true "smoke" but had the meat on the rotiserri and some would chips in the smoker box on top of the grill. Turns out great with just a hint of smoke.

    DUTCH'S GOURMET COWBOY GRAVY

    Saw Dutch's recipe and knew I had to try it. Unfortunately I didn't have all the ingredients. I only had 2% milk so I added a touch of sugar to compensate. Also no shrooms. It turned out great. Just happen to have some left over Popey's biscuits. I know what's for breakfast tomorrow!!!!!

    Deer Meat, I've got that same book. Has got great illistrations in it. Gonna have to give a try with the bacon next time. Sure would be alot easier then tying a ton of knots. mmmmmmm White Castle....drooooooool.
