I know from experience that a rubber mallet works as JJS suggested. My first masterbuilt looked like your picture. I was able to tap the hinge back with a rubber mallet. I ultimately returned it because the entire door wasn't square to the body, and there was no fixing that with a mallet.
i have thermometers in my freezer (whirlpool combo fridge/freezer) near the top and bottom to make sure the temperature is where it's supposed to be. it fluctuates between 3F to 10F. do you guys really set your freezer to be -10F?
Nice setup! My only comment is on #2. I'd advise against it, because you'll be creating a bomb with built up gas in the cooking chamber. You could add a safety shutoff thermocouple but then you'd need a way to remotely control that too in order to re-light the burners.
