    Bought My First Brisket for Saturday

    By my calculations that is going to take about 16 hours. Does that sound right? I have done 3 briskets so far but they were 7-8 pounders. They took about 10 hours give or take to get to 175. Want to pull the next one I do. Good luck.

    Wondering where I should run the lines for my taylor thermometers. I was thinking of drilling a hole in the side but wanted some advice before I cut into the unit. If this is the best way, where should it go? Twords the top, halfway, or lower? Thanks. I have the widebody GOSM.

    First Smoke

    Just finished my first smoke in the new GOSM. Smoked for 3 hours and 45 minutes over apple chips and chunks. Rubbed with olive oil, garlic powder, onion powder, tyme, salt, and pepper. Came out beautiful.
