    Good morning, I'm Ed and I live in Silver Lake, just north of Topeka.  I've got an MES 40 and a center fired offset for the big cooks. Is anyone going to Osage City this weekend for Smoke in the Spring?  BBQ Pittmsasters will be there.

    Learned something today about water and my MES

    So how'd the brisket turn out?  I've got an MES 40 that I've had for a few months and I've had the same issue with bark and texture.

    What about Crab Apple?

    I usually use apple and cherry chips in my MES but now I've got a new pit that I'll use chunks.  I have a couple crab apple trees on my property that I'm always trimming.  Has anybody ever used crab apple?
