Sous Vide Top Round Roast. Excellent results!

I pulled a 5lb Top Round Roast out of the freezer to make dinner and sandwich meat for my wife to take to work everyday for the week. (She is a senior Air Force Commander and rarely can get out for lunch!). The goal was to make this lean and tough meat end up tender, juicy, and tasty! Success...

Preparing for a senior commander Progressive Dinner Saturday!

Long day ahead, finishing the brisket, burnt ends, stuffed Acorn Squash, and smashed potatoes for the dinner tonight. I'll be running my second Sous Vide circulator for the potatoes this afternoon. Bought a relatively inexpensive 850w Wancle SVC001 circulator to supplement my Anova when I have...

Preparing for a senior commander Progressive Dinner Saturday!

I don't have any heat on for the cold smoke. I cold smoke in my dual bin grill using the A-MAZE-N pellet system without any heat, except what is produced by the pellets smoking. It adds just a hint of smoke to the meat after sous vide, without a smoke ring. We have done this with Brisket...

Preparing for a senior commander Progressive Dinner Saturday!

Our Senior Command folks from all the major players on Tinker AFB are having a Progressive Dinner on Saturday. (My wife is a Senior Commander Colonel in the Air Force) There are four food providers, and we drew the main course! Ugh! RSVP's total about 30 people going through the four houses for...

    Sous Vide Mock Tenderloin Steak.

I've added a video to one of my YouTube sites. First one in a long time! This one is an introduction to Sous Vide cooking method, using a cheap Beef Mock Tenderloin Steak that would normally be very lean and tough, and turning it into a restaurant-worthy moist, tender, and succulent treat. I...

Always on standby for Tri-Tip on sale!

I've gotten to know the butcher at Winco here, and he will usually trim a lot of the fat off before packaging for me, so even a better deal! Just finished cooking one of them sous vide to rare with a flamethrower bark. Tasted outstanding.

Always on standby for Tri-Tip on sale!

Tri-Tip SALE again...woohoo! Still had three Tri-Tip roasts left in the freezer from the last sale at our WinCo. Those were $2.48/lb, then the price jumped back to their normal $5.60/lb. Missed an opportunity for more that time. BUT...They were back on sale for $2.98/lb yesterday and today, and...

Awaiting their turn for Sous Vide!

When I'm buying specific cuts of meat , I have a loop that I run to find the best product at the best price. Sprouts will now be added to my list. Base Commissary, WinCo, Crest, Sams, Aldi, US Foods Chef's Store, and now Sprouts as well! Thanks for that...still learning the area around OKC. Just...

Awaiting their turn for Sous Vide!

Sigh.... I decided to run back the next morning to buy some more Tri-Tips. And OF COURSE, the price had jumped back to the "normal" price...$5.48/lb. Never mind. Waiting for them to go on sale again sometime, and won't make the same mistake. I'll buy 'em all!

Awaiting their turn for Sous Vide!

I'm really going to town on various meets Sous Vide right now! My freezer is full of meats awaiting their turn in the modified Sous Vide Cooler, and having a blast deciding what seasonings, smoking, and times to bring them to culinary fruition! Tri-Tip currently at $2.48/lb at our supermarket...

Perfected cold smoked Tri-Tip, then Sous Vide and seared.

I've been experimenting with Tri-tip to find the ultimate medium rare, succulent, tender Tri-Tip. I think I've found it. Yesterday, prepared for a dinner we were hosting. The plan was for Medium Rare Tri-Tip, mashed Yukon potatoes, and a Green Bean side. Started the day by trimming most of the...

    Sous Vide

I always double vacuum bag my expensive or important Sous Vide endeavors. I ALWAYS double vacuum bag brisket and roasts without exception due to very long immersion times.

    48qt Sous Vide Cooler mod...

There are a lot of posts about cooler mods for Sous Vide circulators. Most are using 12-20 qt coolers, but I have used a 48qt without any issues, and converted so as to minimize evaporation. Anova says a maximum of 5.5 gallons is the limit for the 900watt unit, but in an insulated cooler, that...
