That roast looks absolutely delicious. All of these awesome cooks lately have me salivating. I'm going to need to get something on my smoker ASAP!!! Pesky work is always getting in the way.

Beautiful brisket and I just love the puppy stares. I am certain that they both assisted with quality control. Seems to have been worth the trip to get those. Keep those cooks coming.

Forget about my advice. Listen to what Bear says. He is the ultimate expert on the MES 30 here on the forums. My condolences on the lack of capability from your smoker. I am sure it does an awesome job with one butt though :emoji_grin:

I think you missed the details from my earlier response. For me, i am using an offset not an MES. My thought is that heat is heat. Once his MES overcomes the cold of all that meat then it will just cook at a normal rate. Maybe one tip would be to allow the pork butts to get a bit closer to room...
You can always pop over to a Walmart or Target and get a cast iron griddle to set on top of your grates for the 560. It would be a solution and I can't imagine you having any trouble finding one in So Cal. I'm in So Cal and there is a Walmart in just about every direction that I can reach in 5...

If you have a method of moving your smokers to your work site for the cook that isn't going to cause you too much trouble then I would say go for that and then you can be certain to have better results. In my case, I have no way to transport my smoker to work with no truck. Being 200lbs also...
