    Another smoked meatloaf...

Great looking meatloaf sir!! Sorry to hear about the small woes that went along with it but in the end, it sounds like a really tasty cook. Meatloaf is becoming ever more popular around here, especially now that I've stopped trying to make somebody else's recipe and just make it my way. Is that...

    Fajita Fight!

Certified Piedmontese Beef Chuck Roast Chili Idaho Russet - lots o pics!

One thing that I neglected to mention. Fat in meat has a high moisture content. The moisture takes considerably longer to heat up, hence it takes longer to cook. With the Piedmontese beef being much leaner, it cooks a lot faster. This is critical to know going in when you're trying to attain a...

Birthday Brisket For Tracy W/ A Surprise

I guess it was a great gift because it was all that she asked for and I managed to pull it off. Kinda funny how once we start dialing in our cooking the desire to go out really fades. I'd guess that's a pretty common trend among SMF members. Robert

Certified Piedmontese Beef Chuck Roast Chili Idaho Russet - lots o pics!

Yep. All the TD prizes come from the online side and it's all shipped frozen. I believe they have some way to flash freeze the meat so it doesn't lose any freshness. Everything from the wholesale side, what they call "boxed beef" is shipped fresh though. Robert

What an amazing meal and the presentation is first class. Excellent work all around Civil. This is a top notch thread with a perfect summary of the product. So glad you were able to make something extraordinary from your TD winnings. As you noted, the CPB products are much leaner than standard...
