Absolutely outstanding Brian!! A truly fantastic feast that I'd be thrilled to sit down and enjoy. Very nice job sir and it sure is great seeing you more active recently. You bring a lot to the table and it's always fun to see your culinary endeavors.

Holy crap Keith!! That looks and sounds absolutely incredible. I sure do have infinite respect for the knowledge and patience you have while creating these amazing meats. Very well done and congrats on a hugely successful project.

Great looking meatloaf sir!! Sorry to hear about the small woes that went along with it but in the end, it sounds like a really tasty cook. Meatloaf is becoming ever more popular around here, especially now that I've stopped trying to make somebody else's recipe and just make it my way.
Is that...
Wow Chris, what a great meal and a fantastic write-up / comparison. Very well done sir. As much as I loved the original meal, I gotta admit, the leftovers look every bit as good....maybe even a bit better :emoji_wink:

One thing that I neglected to mention. Fat in meat has a high moisture content. The moisture takes considerably longer to heat up, hence it takes longer to cook. With the Piedmontese beef being much leaner, it cooks a lot faster. This is critical to know going in when you're trying to attain a...
Very much appreciate it Joel, and she deserves so much more than I could ever give. Doesn't stop me from trying though :emoji_wink:
It was certainly a good plate. In some respects i like to put together really nice meals to showcase here but as often as not, simple is exactly what's needed. A...
Thanks so much Jim. I've done her right in a lot more ways than just with the food :emoji_laughing:
My thoughts exactly my friend. I just thought it'd be unique to do the candles in the brisket. Made for an interesting twist.

I guess it was a great gift because it was all that she asked for and I managed to pull it off. Kinda funny how once we start dialing in our cooking the desire to go out really fades. I'd guess that's a pretty common trend among SMF members.

Yep. All the TD prizes come from the online side and it's all shipped frozen. I believe they have some way to flash freeze the meat so it doesn't lose any freshness. Everything from the wholesale side, what they call "boxed beef" is shipped fresh though.

What an amazing meal and the presentation is first class. Excellent work all around Civil. This is a top notch thread with a perfect summary of the product. So glad you were able to make something extraordinary from your TD winnings.
As you noted, the CPB products are much leaner than standard...
Very nice looking chunk of pork right there. Beautiful color on that thing and the shot after pulling it looks fantastic. Very nice and glad the cooker is working out for you.
HA!! Maybe this is why all my pics, especially the ones later into the cook, always look horrible

And the saga continues. Another forum member has fallen prey to @Steve H ...the Enabler in Chief himself. sure am glad I haven't been caught in his clutches yet (cough, choke). You're in for some tasty treats though.
Robert
Merciful Heaves Brian!! All of that looks really good but that roast is just pure beef bliss on a plate. Love the surf and turf concept though. Kinda hard to beat fresh shrimp, especially when coupled with that fantastic looking beef. Beautiful job sir.
Robert
That is a plate full of pure culinary bliss right there!! Beautiful job all the way around Charles.
I can see how that would be the case. From my vantage point, here is a countdown in order of appeal:
#3 The ribs
#2 The ABT's
#1 The belly.
Those slices are just fantastic looking. You got me...
Yesterday was actually Tracy's birthday but due to the weather turning really nasty yesterday, we did this on Saturday when it was close to 90 degrees and just a really nice day. We are not materialistic people and both of us come from humble roots so when I asked her what she wanted for her...
welcome back young lady. Nice to see you again...at least I assume "lady" from your username :emoji_wink: That is one outstanding looking meal right there. Very nice job and a great write up.
