Should i not add as much water to the pan as well? Guess Ill start with fewer lit coals and see how that does it along with less water in the pan. Its just suprising at the difference in the burn off smoke and the first cook smoke.

Can't decide whish one would be beat. I only smoke a couple racks of ribs or two butts at most at a time. And a brisket that's not too big either (one I get at publix). My question is could I get what I need on the 18 without rolling ribs or being crowded?

yeah for sure...i didnt get it all because there was too much to fit in my truck...i had it weighted down to where it bottoming out my truck lol...gonna go back and get the rest.... its about a half a ton of cherry wood i would guess.... logs are about 20 inches around but about 18 inch length...
