    OK, did the bend test, and it was starting to snap in half so I pulled them, wrapped in foil, and they are resting. Looks and smells killer.

    Sounds good! ^^ They look pretty good. Going to baste with some BBQ sauce and give them another hour or so.

    Thanks, I was planning on foiling, but have to step out for a couple hours so new plan is to spray with Apple cider vinegar before I go and let them ride.

    I feel confident enough to give them a shot. So they were mustard and rubbed last night. Put them in around 11:15 smoker holding at 225_230. I'm using a mix of Apple and cherry wood. These were on sale at Winn dixie. Smells good already!
