    The probe should be at the same level as the food. If you don't have a probe clip just stick the probe thru a small potato and use that as your holder.

    The best way to test your therms is check the temp in boiling water, depending on your elevation, it should be around 212*. Then check in a cup of ice water, it should be around 32*. Consider the therm in the lid of the WSM a nice decoration...
