    Curing question

    As the others have said, adding curing salt for a 10 hour brine makes no sense...I'm no expert but an overnight "soak" is more a marinade as opposed a cure. I'd skip the curing salt all together... For a bit of a flavor twist...use ginger ale for your liquid in your overnight salt + brown sugar...

    Thanks for all the great input. I'm seasoned...i.understand making adjustments to accommodate burn and temp...it was the chemical smell and taste review that had me most concerned...apparently that is a non issuse.     If you are not asking how much rum you should add it absolutely does not matter what unit of measure you use as long as it's the same unit of measure every time... FYI...one fluid ounce of water weighs 28.35 grams..it simply does not matter if you write down in your recipe 1.5 oz or 42.5 grams
