    my 2 cents...99% of the time...if they're too tough, you didn't cook them long enough. Wrapping in foil after 170 degrees (about 3 hours or so) will help cook the meat w/o drying them out.

    I put some butter and apple juice in when I foil them...so, similar to what you're doing. I've never tried the butter/brown sugar in the foil...I've been told that's awesome as well.

    6 hours total, but the smoker was having trouble getting to 240...windy, winter MN...I usually get them done in about 4-5 hours.

    I don't make my own rubs, so my favorite for ribs is from Germantown Commissary...google and you'll find them. I've tried a ton and this one is my families favorite. I also ate there once as well...I'm not from that area...I'm from MN, but happened to be there for work...awesome old school BBQ.

    so...to be most accurate...I noticed the pic I had was actually $279...$11.29/lb and total weight 24.78lbs. most of that had to be bone weight...I think the prime next to it (w/o bone) was not much more per lb, so it must be just about the presentation.
