    Well, RedOctobyr- when you're just starting out you got to experiment to find just how you like them. AS for which bean to use- I've used them all from well known brand to store brand. The only complaint I have ever received was "Where did all the beans go?"

    Pagan, Make 'em up as you see fit. I have a friend that is allergic to pineapple and I used apple sauce to replace the pineapple.  I've done the beans with smoked shredded pot roast with good results.

     Smooch, I have used dark brown sugar and the regular brown sugar. I basically use whatever Ma Dutch has in the pantry. Dark brown sugar contains more molasses than the regular brown sugar.

    Hi montyg- What is the setup inside your smoker? As for heat sources for a block smoker (concrete blocks?) I've seen units use wood, charcoal or propane. As for my Lang smoker, I use white oak as my heat source as it can burn hot and a little goes a long way. As for flavor I like to use fruit...

    I would use a lean cut of beef such as Top Loin, top round or eye of round. Cut into 3/4 inch cubes and place in a brine solution that contains Cure #1. Then into the smoker in a grilling basket over a mix of apple and hickory.  If you don't use a lean cut of meat that fat can go rancid on you...
