All these gorgeous cooks going I had to join in.
Ya know a fella is a die hard BBQ nut, when he wakes up with pink eye in Amsterdam at 11PM CDT Last Night. Flies all day getting home to DFW. Drives straight the grocery store and buys steaks just to cookout.
Yep I’m just that kind of crazy...
Loving it Al.
I last built a ‘10 Camaro with heads and cam package. I had a small shot on it through a Nitro Dave plate kit and it made 720+ to the wheels, so we turned the shot down till it hit a sweet spot of 680 to the wheels.
This modern muscle stuff is just crazy! Been a BowTie family my...
My exact thoughts, Al.
I’m gonna steal that idea. So many great technique tips and tricks around this fire! Diggin’ it.
The birds look gorgeous lemans.

HELL YES!!!
What’s done to the Pony Car?
I spent my day peddling a bicycle around a small village north of Amsterdam. Even found a BBQ joint I was too scared to try!

DAMN... I bought a local Traeger in the DFW area about the time you posted this.
I sure wish I had seen your smoker! I hope you’ve had a completed sale.
Cooking on a Traeger Pro 34 with Smoke Daddy’s PID.
180 to 200. Start at 180 and finish at 200 with the switch more dependent upon the exact time I want to put it to rest. I smoke for 20+ hours.

I use primarily Pecan on everything in my Traegers. Though I supplement with a chip blend in a Smoke Daddy smoke generator with a chip blend of Apple, Cherry, Mesquite and Pecan. I also have a smoke stick for pellets I tend to use my Pecan pellets with. I have a tray also but I have sealed up my...
Those are my summer temps in North Texas also.
I did this first smoke with the 5X8 maze with pecan pellets and a mixture of apple, cherry, mesquite, pecan chips. The smokeflavor came out a tick too strong for us, though we didn’t seal it and allow it to mellow.
The following day I did another...
That was the very first thing we noticed was the increased heat of the peppered cheeses. We didn’t rest the cheese at all. I think the grandbaby ate her own weight.
ABSOLUTELY THE ORECISE HELP I NEEDED!!!
My summer temps can hit 100 degrees. The ambient air temp was mid 80’s during this smoke...
Just ordered a 4lb blend of dust. I had no idea of such a thing with the AMNPS. I was having trouble keeping mine lit and was running a test today with the fan running on a Traeger 34”. It decided to smoke away for me and I was snacking on cheese at the time!
Yep that epiphany moment. Get more...
I have been having fits getting my A-MAZE-N tray to smoke. I have a downdraft hood on a Traeger Pro 34” with a Smoke Daddy PID controller. With the fan being off so much the air turnover kept sniffing out my tray.
I had a little experiment today with the tray using a combo of wood chips and...
HAHAHA... Too True... I even reengineered the mounting setup Smoke Daddy provided for the smoke generator. Would mount tight enough for my OCD.
Coming from a family that sank nearly every deposable dollar into street rods or racing it is nearly balanced and blueprinted. I was going to opt for...
I have always ran my chimney with the cap dead even with the chimney tube on my Traegers. The non PID controllers have more swing and less exact accuracy in hiting a dialed temp. But I have a downdraft hood on mine among many other tweaks that make my experience with pellet grills hitting a...
