    Rust - Rust - Rust

Heck no, Larry.  These are all good questions. I can't help you out with the air change question, hopefully somebody can chirp up about that.  As far as drilling through the porcelain, though, I took a spring loaded center punch and struck the hole center location with that prior to drilling. ...

    Where Was Bear??? (With SnowView)

LOL, I looked at this and thought, "Where the hell is this?!".  Then I looked at the date of the original post.  My wife and I were out that way when this happened.  We stayed by her sister located in Glen Gardener, NJ.  We went into NYC to be all touristy prior to the storm hitting.  We left...

    Rust - Rust - Rust

Thanks, Larry.  The exhaust stack is 3" diameter duct tubing from Fleet Farm or Menards.  There is a 3" to 4" transition at the top of the stack. There is one exit point located mid point in the smoker and one up high.  They both have gates on them so I can control the exhaust flow inside the...

    Rust - Rust - Rust

That looks just like the same crap that was in my fridge build.  It's like a cellulose, fibrous crap.  It sticks to everything.  I also ran into rust on the bottom of my fridge as well.  This stuff must have an awesome ability to hold moisture that builds up during humid weather and condensates...

    Expedited Turkey Smoke

Yea, it's the wireless remote feature that I could have benefited from yesterday.  I got wrapped up in another project running concurrently to the turkey smoke and I overshot my goal IT, piss me off!  Meh, it still turned out OK.  But now I have an excuse to get a Maverick......or iGrill, either...

    Pork Butt Temperature Help?!?

Agreed. NO foil.  AND, no foil during the rest.  I love the crunchy bark!

OK.  That's a bummer.  I, personally think you might be OK.  If you use a hot plate, I don't think the temps produced are all that high.  I could be wrong, though.

Why can't the insulation be removed?  If it is removable, I would remove it and replace it with Rockwool.  That is guaranteed not flammable.  What is your heat source, propane?

    Expedited Turkey Smoke

UPDATE: I ended up getting the turkey smoked.  I was browsing some other threads and went on a suggestion/method of another forum member.  I mixed up Tip's Slaughterhouse brine and thawed/brined the turkey in a large cooler.  I had bags of ice in with the turkey and brine and some bricks in...

    COLDSPOT FREEZER BUILD

You might want to consider using Rockwool for insulation.  I would ditch the original fiberglass and stay away from fiberglass all together.  Too much nasty stuff in it.  Rockwool is a natural product and is really better suited for heat retention over fiberglass.  That' s my .02.

    recycling smoke

Keep it simple.  No recirculating fan.  That would complicate the hell out of it and I think it would just not work.  The cooking chamber has to be exhausted at some point.  You will need 2 separate exhaust or divert just part of the single exhaust.  See......it's just getting too complicated. ...

    Expedited Turkey Smoke

Yeah....I think I am calling off the smoke for Sunday.  I don't want to make anybody in my house sick.  I am going to proceed by letting it thaw in the fridge, brine the 24 hours, let the skin dry out and smoke it during the week.  It was a last minute decision to buy the turkey but it is not...

    Expedited Turkey Smoke

I would like to smoke a turkey on Sunday for a trial run for Thanksgiving.  I have purchased a 12 lb. turkey today and it is currently in the refrigerator.  Is it going to be possible for me to get this bird thawed and in a 12 hour brine in time to stick in the smoker by 10 or 11 a.m. this...

Big Smoke (for me) need advice

I am with Bama on this one.  I'd leave 'em whole.  I have let butts rest for 3-4 hours in a 170° oven, uncovered (I LOVE bark), because they finished ahead of schedule.  Some people fear they will dry out, it just doesn't happen.  They have always remained juicy for me.  Although, pulled pork...
