    Big Steel Keg

I just ordered one. Pick-up Wednesday. Yes they are wonderful cookers, I've been researching Kamado/Tandori style cookers for a while. The Keg is by far the most bang for the buck, and I've spoken to people who said they can easily do low and slow and sear at temps in excess of 1000*.

    Brining ribs

No I don't brine pork.. Those ribs were most likely boiled first. Alot of places do that to hasten the cooking process. Usually you can tell because there're tough because the boiling removes all/most of the fat which is where the flovour comes from as well as it keeps the meat moist.

    Tips for a Newbie

Sure, welcome. First go through this site, it's full of information and get the tree day smoking class. If you buy a smoker box ok, but you can also use foil pouches. The theory is the same regardless of the cooker. On a gas grill put a drip pan under one of the side racks with some hot liquid...

    Is It Worth It?

No, you can get them new for that. I had one I bought at Lowes a few years back and paid $129 out the door. Shop around. Just my 2 cents.

Are ribs bought in bulk from the butcher supposed to smell different?

Look at the color, if there is a grey tint or they are off color they're bad. In any case, if you decide to cook them make sure they are completely done. Personally, I wouldn't take the chance, I'd return them.

    Kamado?

I looked at the "Kamado" Brand by Richard Johnson and if I google it they don't have a good rep and a lot of complaints with the quality, there is even a website forum dedicated to all the complaints. I sent them an e-mail asking a few questions and they never responded. The Komodo brand is top...
