    You could reheat the pastrami in a steamer basket to help remove some salt. You could also chop it, add potatoes, onions and make hash with it. Pastrami is a terrible thing to waste!

    We like our steak dry brined with coarse kosher salt over night. Then pepper, granulated garlic and avocado oil. Avocado oil works great in cast iron skillet and when using the SnS. My latest fave steaks are Costco’s prime sirloin cap steaks. They’re delicious and as tender as can be.

    Thanks to third eye for adding that very cool info. It’s a tremendously succulent bite of pork goodness.. While it makes a great sandwich dressed any way you like, I like a thin slice, no sauce straight from the carving board.

    Thanks JC. I just turn the butt the its side with the bone on top and slice off the tube and MM end. My smoked end is sitting on the cut with the MM on top and tubes below. Give it a try.

    Thanks Chili. I actually used and exploited your “basic pork” rub recipe and boosted the Lawrys base with Chile powder, celery seed and a touch of cinnamon. The bark on the end slice was wolfed like a breath mint after I took down the sandwich.
