To inject or not to inject....

So I've done 2 shoulders before and they both turned out quite well. I used the recipe from the "Pulled Pork Recipe for all" thread and enjoyed it. Over the weekend however I was watching the food network and their special on "Memphis in May" and saw Chris Lilly injecting his shoulders. I...

    Pulled Pork Recipe for all

I've done this recipe twice and both times it came out great. My only advice is if you follow it to a T it's got some kick so maybe cut the cayenne portions in half. Also, if you're worried about too much salt I would cut it out of the rub and sauces before I would reduce it in the brine...

    Pulled Pork Recipe for all

I was thinking of using something like this. I figured it would clean up easily. http://www.target.com/gp/detail.html...sin=B0000V8GJ6

    Pulled Pork Recipe for all

Out of curiosity what do you all use to flip the pork? I used tongs but I didn't like it because it scraped up the bark. What's the best way to do it without disturbing the pork?

    Pulled Pork Recipe for all

So I did my first pork smoke and it came out pretty good. I followed this recipe to the T and it turned out. My only mistake is I've never done a smoke this long so I never checked the water bowl and it ran dry which I think caused the pork to turn out a little tough but once that sauce hit...

    Smoked Beer Can Chicken

Every weekend is my goal. This weekend I'm trying my first pork butt. I'm using one of the recipes from the pork forum. Hopefully it will turn out to be as good as everyone says it is.

    Smoked Beer Can Chicken

Here's my question for all the experienced smokers. Is there such a thing as too much smoke? Me being a young guy new to smoking I think that if the smoker isn't billowing out smoke then it must not be smoking well. The last chicken I did I got frustrated with the smoke and at one point was...

    Smoked Chicken Questions

    Smoked Chicken Questions

Okay, so the skin isn't supposed to taste good. That's good to know. Here I was eating it wondering what I did wrong. The rest of the chicken tastes pretty good. About the woodchips though, are they supposed to smoke quite a bit and then tail off? Will chunks give a more consistant smoke...

    Smoked Chicken Questions

So I've just started smoking and I've done chicken twice. Both times however the chicken skin didn't taste good at all. Both times I had a premade rub on it, the second time I also rubbed some olive oil on it too. I've read your guys' posts about people picking the chicken to the bone because...

    Smoked Beer Can Chicken

That bird up there was cooked at about 225 and it took just over 4 hours to hit 160. I pulled it then and let it do the rest as it rested. I used Hickory and Maple but mostly Maple. As you can see I quartered an onion to plug the neck whole and actually the onion tasted pretty good when it...

    Smoked Beer Can Chicken

I spent yesterday reading through all 5 pages of this thread on Beer Can Chicken so I did one myself. This is only my third smoke. Here's some pics. Also I whipped up some of Lady J's Bourbon Mustard Sauce and it's awesome. The bottle of beer in the pic is what I used just in a pepsi can.

Another Young Guy Trying to Learn How to Smoke!

Alright, my first chickens were okay. I used cherry wood and I don't think I liked it. Also, I sort of made up the brine and might have messed that up too. I'm hoping to smoke another chicken tomorrow. Does anyone have wood suggestions or maybe a good starting brine recipe? I appreciate all...

Another Young Guy Trying to Learn How to Smoke!

Hi, my name is Kyle and I live up in Kenosha WI. I just bought myself a smoker about a month ago and with the cold weather up here I've only had one chance to use it. I smoked my first rack of ribs and man they were good. I'm going to try my hand at a couple whole chickens tomorrow (they're...
