Using an aluminum pan for Brisket?

While usually don't use a pan, when I do, I make the Au Just from Chef JJ. I smoke the brisket fat side up over the pan then about half or 2/3's the way through the smoke, I flip thew brisket fat side down and put it in the pan. That way (if I guessed right on the liquids, the "bottom side"...

    Bear’s Chicken Din-Din

Bear, To make matters worse, I taught survival in the Air Force for a while so, I ate (and made others eat) some things WAAY worse than brains! For example, did you know that rabbit eyes (or actually most eyes) are a great source of salt which can really cut down muscle cramping in a high temp...

    Bear’s Chicken Din-Din

Bear, I grew up (at least in the summers), working on my aunt and uncle's farm. When my uncle slaughtered a cow, pig or even a chicken, you ate about everything, including pig's brains (or rabbit's) scrambled with eggs for breakfast. Scott

    Bear’s Chicken Din-Din

Bear, Just really read your signature block and Dong Tam rings a bell from a long time ago. I was in the back of gray/black UH-1 and we were almost never down south but I think I remember a huge response bringing "stuff" in and men out after a big explosion in early '69. I think that's the only...

Applewood (first time using it) Chicken

Bull, That chicken looks awesome! Like you, I like using apple juice, sometimes mixed with 20-25% Red Stag cherry-infused bourbon, as my favorite spritz! I go back and forth between apple or cherry wood, they both add that "sweeter" and lighter smoke flavor than many others. Great Job, Scott

    Greek Sparerib Barbecue

Ron, Trying this today. Already pulled the trimmings and they were great. What really amazed me was the smell of the rub and of the rubs when I pulled them out today to let the rest and come to room temp. I'll post later tonight/tomorrow about my results but so far, its been killer! I'm also...

    Hi, I'm Aimee!

Thanks JJ, from you that's quite a compliment! Right now I've got spareribs in the smoker experimenting with a Greek Rub and smoke that I saw on this site back in 2012 and on Foods of the World. So far, it smells great but we'll see how it comes out! Thanks Again, Scott

    Hi, I'm Aimee!

So, I screwed up! (Once again!) If you ever want the best au jus in the world and lots of other things, listen to Chef JJ! I think I'll crawl back in my corner but, my point was, ask and guys that really know this world will answer. I have learned a lot from all of them! Seriously, there are...

    Hi, I'm Aimee!

BTW Aimee, Disco and a guy named Bearcarver or Bear are two of the best to get ideas and solutions from. They are awesome (lots of others are too but Bear and Disco are, in my opinion, two of the best!) Scott

    Smoked Tri-Tip

Decided to smoke a Tri-Tip for the 4th of July since last weekend I made my wife eat venison! I made a marinade with 1 cup soy sauce, 2 tbsns minced garlic, about 10-15 turns of a pepper mill with a mix of black and white pepper and 1/2 tsp (ok, a little more) of red pepper flakes. While the...
