A 24-hour off-gassing is also highly recommended after smoking cheese. This allows the strongest of taste and flavors to off gas from the cheese before sealing them in.

Idk how yours was done in 9. A lot depends on how the butt is constructed in an intramuscular sense. Also different cookers have different cooking times. My UDS for example cooks things very fast. I've always told myself that it has to do with the increased humidity and possibly slightly...
If you tear down the chip tray assembly a bit you can use straight wood chunks in lieu of the pellet tray. It's not as versatile as the pellet tray but way better than the default chip tray setup, no doubt.

You don't need a new smoker. You simply need a new controller!
You'll actually find that your existing smoker works far better.
There's PID options that you can build or you can get one of several premade options. The Auber controller seems to be the easiest and most popular replacement...
C'mon vol. Do yourself a favor and get some good pizza pans. You'll never regret it :-)
