I've not posted in a bit, but have had the smoker running a lot nonetheless. I'll put up a post every couple days this week to show everyone what I've been up to.

Recently came across a dough recipe that has made the best at-home pizza I've had.

Have made it each of the last few Fridays for "pizza Friday"--gives us something to look forward to. I make the dough 24 hours in advance and let it proof in the fridge. We've made a few different pizzas, but the two best were regular ole pepperoni with onion and a cheeseburger pie made with leftover chopped brisket instead of hamburger. Excited for Friday already.

Also used the dough to make mini calzones. Stuffed mostly with leftover BBQ meat, but also did a few with eggs for breakfast. Can freeze them and treat them just like hot pockets!

Some fine looking bakes there, nice job! I'm finding your dough recipe appealing as it only uses a half teaspoon of yeast. I'm not really a thin crust guy but being able to make four pizzas with one packet of yeast is kind of hard for me to pass on, circumstances being what they are, 4 packs left in the pantry. RAY

Wow, they sure look good! And I just ate. Now if I can get that dang hot pocket jingle out of my head!

C'mon vol. Do yourself a favor and get some good pizza pans. You'll never regret it :-)

Then you can have you some good deep dish pizza instead of that thin stuff :emoji_stuck_out_tongue_winking_eye:

They do look tasty though

Hell yeah those look awesome! Do you oven bake them or grill?
Thank you! For these I oven baked at 500. They are so thin it only takes about 6-7 min which I love--it is a true NY style crust.

Thanks, Ray! That was a big draw for me too, then I found out the guy who created it was the president of the American Baking Institute and goes by "The Dough Doctor." It is the best combination of taste and ease I've found. I love thinner NY style crust though.

Eh I'll stick with the pizza, I'm not big on casserole :emoji_stuck_out_tongue_winking_eye: ... in all seriousness thanks for looking and I love all kinds of pizza! We do a Detroit style recipe that Jeff Mauro from Food Network created, it's great.
