    I'm watching this thread but at the moment I can't think of anything that's very spicy that's specifically tied to our country. I don't know what country you are from but I am guessing that your food is probably more spicy and exotic than American food as a whole. :-)

    I would almost look to give it a nice polish with a step up sanding process all the way up to say 1500 or 2000 grit. Then give it some high temp clear coat. She would be so shiny

    Look into building a UDS smoker. Tons of bang for your bucks and no welding or special tools required!

    Lots of folks install needle valves for fine tuning temps on those propane burners. Check out the propane smoker build sub forum for examples of what I'm talking about

    My personal preference would be the TP-20. Not because of anything wrong with the inkbird whatsoever. It's simply because the Bluetooth technology does not work terribly well in my home.     The 140 in 4 isn't such a big deal when dealing with fully intact muscle meats as they are.considered sterile below the surface. This of course assumes that no injections have taken place. All bets are off at that point regarding sterility.

    Wow. That's a lot for the MES lol. Best advice I could give you is crank it up to 275. If be tempted to squeeze as many as I could into your oven at 300 or so degrees at this point. This would speed things along and help out your MES to get the other ones done asap
