    Rained Out!

02ebz06, I don't mind grilling outside in any weather. I would just like to have some cover to grill under. My the portion of the deck I have "Ole Black Betty" parked has no overhang or any cover to protect me from rain. I'm probably going to grab my 10' x 10' awning from my cabin the next...

    5 Day Basics eCourse

OK, what am I missing? I have tried to sign up for the 5 day smoking meat eCourse like three times. I have submitted my e-mail address and have received nothing. I have checked my in boxes, spam, junk and any other place I think they would have ended up. Nothing. Any thoughts?

    Rained Out!

Wanted to grill some pork chops and cabbage steaks on "Ole Black Betty". Ended up cutting the pork chops into small bite size pieces, cooking them in cast iron pan. When they were done, pulled them out, cooked up the cabbage in the same oil left from the pork. Once the cabbage was done...

    Rained Out!

I was removing the cover on "Ole Black Betty" when I heard a deep rumble. I was thinking dang, I sure am hungry. My stomach is growling like crazy. After getting her cover off, lifted her lid and started removing her racks, there it was again, even louder. I was wondering if I should make a...

What a painful experience, KitchenAid sausage stuffer, what a PITA, looking for suggestions.

Don't forget to lube that baby up. Including the silicone "o" ring and the gears. It makes for some easier cranking. At the end, some people use bread in the stuffer to get out all the meat, some use Ice. Have fun!!

OMG I ate the whole thing!!

I picked up another 3 pkgs of spare ribs today at $1.89 a lb and a couple of pork butts to go with them at $1.99 a lb. Got home and proceeded to fire up "Ole Black Betty"! While she was warming up, I trimmed up a couple of slabs, used some mustard as a binder and powdered every nook and cranny...

Pork Chops on the new Char-Griller Grand Champ XD

Redicans, I missed your first question. I cooked the chops in the main chamber while messing with a fire in the firebox. Wouldn't call it smoking them, they weren't there that long. I didn't sear them, they were on the grill longer than that. Just cooked them on the top rack 280-290 until...

What a painful experience, KitchenAid sausage stuffer, what a PITA, looking for suggestions.

Kilohertz, a couple of q's. Are you keeping a log or journal of your sausage batches? This is where I find some of my problems. One specifically jumped out at me. In my journal I copy down the recipe I intend to use for that batch so I can refer back to it. I made a batch of Sweet Italian...

Pork Chops on the new Char-Griller Grand Champ XD

Redicans, The first thing I think I will do is raise the wheel side so the oils/juice drain toward the plug. After it cooled down, I cleaned it out and flipped the charcoal pan over in the main chamber. I have read that this will more evenly distribute the heat. While doing this I noticed a...

Grilled backstraps with a side of brats!

Nice job. Got my mouth watering for sure. Just curious, Like you said "Gotta get moving using up some venison before season gets here". How do you still have back straps left this late in the year? I got 5 deer last year and am down to a few pound bags of ground venison. I would have to...

Pork Chops on the new Char-Griller Grand Champ XD

Got the new offset grill on Sunday. Did a few seasoning burns. Decided to take her out for a spin tonight. Cooked up some Hasselback potatoes and pork chops. MMM, MMM, MMM!! So tender and juicy. Done to perfection. I was actually seeing how well she held her temp with just a few small...

What a painful experience, KitchenAid sausage stuffer, what a PITA, looking for suggestions.

Been there done that, bought the tshirt. Best thing to do is GET A SAUSAGE STUFFER. Before buying mine, I read all the horror stories on how the KA stuffing attachment is a PITA. I thought I will be different. People must not know how to use it properly. After my first batch I bought a 5 lb...

    Pickled eggs. Different approach.

I am banned from making pickled eggs ever again. 3 weeks prior, I made up a bunch to take with me to our family trip to the cabin. I forgot I had brought them until day 3. I was so excited I remembered them, I busted them out and as soon as I cracked open the lid, the whole cabin smelled like...

Does Anyone Have a Problem Eating Cucumbers?

Good topic. I HATE CUCUMBERS!!! There I said it. I can eat the $h1t out of pickles but I cannot stand the taste of cucumbers. If my wife gets upset with me, she goes and has a few bites, then comes to kiss me. UUGHH!!! Never have liked them. Like I said I'll eat pickles and I'll even eat...

Finished product on smoker...What to look for.

tbrtt1, Thanks for all the info. I had a hell of a time finding a pair of gloves to use as hot pads when I started tinkering in the kitchen a few years ago. I couldn't stand using a tea towel, large cloth hot pads or bulky oven mits, if I could find any at all. I found some grill gloves...

Finished product on smoker...What to look for.

Thanks for the replies. In the videos I watched before were mainly how they do their own rubs/sauces. Then they slap them on the BBQ, wait for a bit, Spritz, Spritz, pull them off, slather with more sauce, wrap in butcher paper or tinfoil place back on the BBQ, then pull off to to taste. I was...
