Chopsaw, Thanks for the pics. Definitely going to try this approach. The
2 butts in a bag are not frozen when purchased. I froze them thinking they were two separate individually packaged butts in one large bag, I didn't realize until after I chucked them in the freezer for about a month...
Keep the meat, toss the smoker and get a stick burner. Problem solved.
Just teasing. I completely understand the feeling when the power goes out. Happens here all the time. Sorry for your loss on the meat.
Those look fantastic. A few years ago I learned an important lesson while making Italian Sausage. The importance of the test patty. I thought it was a waste of time. I was using a recipe that many have used and approved of before, WHAT COULD GO WRONG? I did up a big batch, stuffed them all...
Thanks to all for posting all this great information. I just happened to buy 6 butts yesterday and cut 4 of them into steaks. Individually vacuum packed them and stacked in the freezer. I'm looking forward to trying some of these great recipes. My mouth is watering just thinking of it.

Thanks for the info. I thought about slicing those 2 last butts into somewhat perfect chunks for curing into bacon and then grinding the rest. I like your idea of curing everything and using the bits for sausage, meatloaf or whatever. Just got Ole Black Betty a few weeks ago. It's been so...
Guess I jumped the gun on this one. I was so excited that I may have stumbled onto something new, I failed to do my due diligence and research it a little. Within a few minutes I see that it is nothing new, and that Buckboard, Cottage and Country Style Bacon essentially the same. Sorry folks...
My local meat mkt has bone in pork butt for $1.49 per #. These are packaged two butts per bag. I jumped on this sale a few months ago and bought 2 bags, (4 butts total). It wasn't until AFTER they were frozen that I discovered they are in the SAME vacuum packed bag. I tried to get one out to...

1.) What temp are you trying to keep the CC at?
2.) Do you have the stone(s) in while the grill is coming up to temp or do you slide the stones in with the pizza on them after the CC comes to temp?3.) what is your choice of...
Marknmd, How do you feel the ASH wood performed for you? Some say it has an off taste on food. Others have suggested not to use it because it leaves behind a ton of ash in the FB. I only ask because I have a bunch of it here on my property. I had been informed to look for downed Hickory...

I started keeping my recipes on my phone through an app called Recipe Keeper a few years ago. If I see something written down , or, on the internet that I would like to make, I copy it and save it to my phone. When visiting the inlaws, (3-4 times a year), I make it a point to go through my...
RedNeckWino, welcome to the group. I see that your profile states Western Michigan. Are you a "UUUPER"? or a Troll? I'm just outside of Midland MI. As a fellow veteran, I wish to also thank you for your service.
