Well now that I have found smoking I can finally contribute to Thanksgiving. So what we have is 10 lbs of shoulder, a veni roast and smoked nuts. Right now I only have the 10 lbs of piggy ready to party.

Ok. Would it help to use olive oil as a glue for the rub and adding a little more brown sugar to help bark it up? Also would pecan/apple be an ok mix for wood?
Looks great! The last two I have done I smoked between 250-275. No foil it sits in a foil pan with apple juice and gets a spritz every 2 hrs until 205 then it gets put to sleep for a bit. Imay do it Tuesday depending on work.
Yea. I have 2 5+lbers I am smoking plus a venison roast 2-3 lber that I am smoking Wednesday for Thanksgiving. Needless to say I will be getting up super early to start incase this happens.
So because I have never smoked Venison before let alone a roast what are your suggestions. What temp? I am putting it in a foil pan should I add something to the pan like I add apple juice to the pan for my pork shoulder? It will be in the smoker with 2 5+ pound pork shoulders. I have a rub...
I think in addition to my smoked shoulder I am going to add on a smoked venison roast for good measure. I am overly addicted to smoking everything I cook now :)
Welcome! Is that the 40" propane smoker? That's what I am smoking with and I love it. Still working out the kinks and getting past rookie mistakes, but one of the best hobbies I have picked up. Hope to see some qview posts soon.
