The resting process for sure was no where what it should have been. I was pressured to get dinner on the table by my wife so it was foiled and let sit for half an hour. I really feel as though it did not smoke as long as it should have. I did a similar size pork shoulder and it took 15.5 hrs...
That does sound awesome foam. How long in nuker? Sorry never even cooked them in a pan, but I love eating them. Garlic and bacon and almost burnt so they are good and crisp yet soft inside ...alright now I am drooling
I will have to check into his process. They did crunch up a bit. Great looking pumpkins there. Nice of you to share with them. We had a guy down the block who would let them rot before giving them away to any of us.

1. Soak in water or no? If so how long?
2. What wood to use I have pecan, cherry or apple? And how much chips...

I have a Materbuilt 40" propane smoker, and I am having an issue with getting it to give me a tbs. I soak the chips for atleast half an hour or more. I have read about using a cast iron skillet which I have been and still no help. I am burning with the burner dial as low as it will...
Hey I am having a problem with getting the smoke to be thin. I did upgrade to a 9.25 inch skillet in hopes it would help and have soaked the chips atleast a half hour, but the smoke just billows. I am using a Materbuilt 40" propane smoker. Is there a way to adjust the flame it is still...
