    Baby Backs were on sale how many did I get??

    Went to Restaurant Deport to pick up a few tri-tips and noticed they had Baby Backs on sale!!  3 per cryo at $2.29 a lb.  This is the lowest price I've EVER seen them.  How many 3 pack cryos do you think I got and how many would you have gotten???

    First use on my 12" A-MAZE-N TUBE salmon, cheese, salami and venison with pics

    1 word umami!  Came out sweet, smokey, briny and has tons of flavor.  I put half in a vacum bag for 2 weeks, but didn't notice much improvement over the fresh one like the cheese.  I've since done 4 for gifts.  Everyone that has tried it so far demanded I make them one lol.

    If I cook my salmon I do like it prepared just like you mentioned, but I did just pick up a 5lb bag of alder pellets and another 30lb box of fillets for lox.  I will be doing about 3 batches of lox this weekend and plan on doing all 30 lbs!

    Yeah I think you need to get a smoker that can get up to more than 165 degrees or just get a weber grill and do an offset smoke.  It's going to take several days smoking anything to temp at 165 degrees MAX.
