    Father's Day Carne Asada

Oh ya, and those are some hardboiled eggs that will be made into smoked deviled eggs and mozzarella sticks that are up next! I usually use hickory but I'm now out, so they will be getting the alder treatment!

    Father's Day Carne Asada

Due to unforseen and completely uncontrollable circumstances, which has absolutely nothing to do with the sheer quantity of alcohol that may or may not have been consumed on Saturday night, this project got delayed. So the meat has been sitting in the marinade for 3 days, which has me a bit...

    Father's Day Carne Asada

Last year I did a prime rib for Father's Day and it was one of the best products that ever came off my smoker, thanks to bearcarver. This year, I decided to switch things up and I'm doing some carne asada. I thought it would be cheaper, but the only place in town I could find skirt steak, it was...

    Experiments with my butt

Ya I just literally youtubed it! It's really easy. I just cut around the long t shaped bone exposed on the side of the butt. I had to cut a little from one of the other sides as well where it was exposed. I don't know how to explain it right, but after it was out the meat would kind of "unfold"...

    Experiments with my butt

I can't recall exactly.  It wasn't huge, but it was significant... probably 45 minutes to an hour.

    Experiments with my butt

I will NEVER go with a lower heat again.  I can't tell you how many nights I've stayed up past midnight waiting for it to get done, only to end up cranking the temp up so it will finish.  Easily my smokes have all taken 18-22 hours.  This is the juiciest, most tender pulled pork I've ever made...

    Experiments with my butt

So the plain ol' butt just came off the smoker.  I must say, it has the same juiciness and delicious flavor of the two halves, minus the tasty bark.  Which I was surprised... I was kind of ready for it to be terrible.  I guess I have to add that no matter what I smoke (minus prime rib), I never...

    Experiments with my butt

LOL!  I was so proud of myself because I saw it flying through the air and thought I dodged it, but then was a bit concerned when I couldn't find it.  It took about 3 seconds before I realized the flesh on my foot had a nice hickory flavored crust! So the bad thing about the MES40 is that when...

    Experiments with my butt

Good point!  Except I'm the only one in the house that likes baked beans :( 9 hours in at 275 and the smallest piece is only 162!

    Experiments with my butt

There are a never end supply of butt jokes to be made when it comes to pulled pork :) It's coming along slowly but surely..  Didn't run into any hiccups until I refilled my AMNPS and was lighting it and flung a hot pellet directly into my shoe!  Instant blister...

    Experiments with my butt

Hi all!  It's been many months since I've posted, but in the past several months I've had many successful smokes.  LOTS of smoked salmon, ham, bacon, hardboiled eggs, etc.  I make a chicken stock-based soup now with chicken, pork sausage, zucchini, kidney beans, and pesto.  I cold smoke the...
