    I can't find anything in the description that states they are 100% hickory - if they were it would say so prominently on the bag. They are not bad pellets, but are probably 65-70% oak or alder, with the balance being hickory.

    I doubt the Traeger are 100% hickory and I am unware that Camp Chef makes a 100% hickory pellet either. I have not found anything on their website that shows it. Do you have a link?

    I cook unwrapped at 275F and sauce during the last 15-30 minutes. BB take 3-3.5 hours, STL's 3.5-4 hours on pellet cooker.

    Welcome. To get max flavor your best bet is to keep your temps around 225F or less. Also, the pellets you use can make a big difference. What pellets have you been using? I'd suggest going with a 100% hickory pellet.

    They sure are good. Chuck ribs are the only thing we get around here and I love them. Those definitely look like chuck - roundish bones, 4 bones to the plate, etc. Just want to make sure you are not paying plate rib prices for chuck ribs.

    Just be aware that not all tubes fit every stuffer. You need to make sure the horn size is the same. Frankly, I would just get the stuffer that suits your needs and not worry about the tubes you already bought. Most stuffers come with tubes and you can get extra tubes for not much $$.

    That's was smoking does to meat. Nitric oxide from smoke fixes the myoglobin so that it does not turn brown, and stays red. It's called smoke ring. Cures have the same effect.
