I keep mine in a run. I ran the fence wire out along the ground about 3 feet out and laid flat rock on top of the fence wire. If anything tries to dig into the run, they have a ways to go and will likely be found out before completing their excavation.
Slow when they first get to laying age, solid layers for maybe 2 or 3 years, then they start to decline.
I never have had one live long enough to run out, but I usually cull the older ones when they stop being overly productive, unless they die first.

Smoke until you get the color you want. With cold smoked bacon, it is not taken to a temp considered ready to eat, so yes, fry it.
With hot smoked bacon taken to 145°F, it is safe to be eaten as is, but better fried first.
