Awesome post and recipe.. Now I've only tried pickled pickles lol and I've always just eye'd those jars of eggs , never seen sausage ... Figured they'd do other's more harm than me good if i delved into them.

I believe it's just brand specific here in the States . However regulations in Canada may be different than here in the states but I'm going to assume and say they're probably close to or the same as the states .

It could be.. Idk if you have " pilgrims" chicken up there ..but if you do , read the package.. It's packaged in chicken broth and a few other ingredients ! Basicly a brine !

Not to bad managing temperature on it ..However it could and will be better after i make a few tweeks and seal the firebox a little better than it is now. I'll post a few more pictures of todays ongoing...

Yes sir.. It's nothing to big , Over and under Smoker .. 2 slide out grill plates . Huge fire box that has additional slide out grate for grilling/reverse seared Steaks..

Something to think about , prices can vary from state to state due to multiple variations ... Weather can even play a huge part in market prices due to trucking..Time and...
Some info you may or may not know ; Florida produces the most cattle in the united states. This was true 12 years ago..probably still true. This may have something to do with those low prices

Odd time to start them at 10am however , these aren't for dinner ! They'll come off and be placed in a pan with some of that good aujus and the whole pan will slide into a expandable vacuum sealed...

Here's my 2 cents on the brine topic..
If the birds are purchased from your local grocery store , you don't need to brine . They're allready packaged in a nitrate solution . I agree with the post above mentioning..a rinse and pat dry followed with a nice rub and off to the fridge overnight ...
