If you build a fridge-smoker and leave the cooling system intact, could you use use an electric coil to smoke wood in the bottom (or other means to introduce smoke into the chamber), does that make cold-smoking...
I used to own a charcoal GOSM that was heavily modded. It was a good cooker, but I began building/using UDSs and didn't use it much anymore. It got jealous and wanted to be traded for some italian leather furniture!

Well my gift arrived today...WOOHOO! Of course I just had to break it in right away, so I got me a chicken, rubbed it with some olive oil and sprinkled her with Plowboy's Yardbird Rub. I used some elastic food-grade string-type ties that came with my Ronco rotisserie...they definitely come in...
I've been tossing that and the Weber version around in my head for a long time. It came down to cost and functionality for me. I can always add a basket later I figure.
That's my plan.....rotisserie and/or extra head-room for the kettle, rotisserize my UDS...lots of options! Should be able to get more baskets and the rib-o-lator trays too when my b-day rolls around. :)

A couple of times I've placed my grates in the oven and set it for a self-cleaning cycle. It gets them clean alright, but fills the house with smoke....a definite head-down situation!
It does have a tendency to tip if not counter-balanced, but as long as I keep some weight in the food box it's stable enough. I tried doing without the water pan and simply use a concrete step in the bottom, but I went back to using the pan filled with sand.
