Ribs not pulling away from bone

:) If it sounds like I’m composing, I’m not. The food is too good not to be happy about. The smoke ring even stains the bones pink! I’ve never seen that before. I’ve eaten probably an unhealthy amount of smoked meat since I got this thing. My wife is pregnant and has lost her appetite for all...

Ribs not pulling away from bone

On the last rack I made, I upped the temp to 350 for about 15 minutes to darken a bit. I used to go 225 the entire time with charcoal. As far as the ribs not being done, they bend and crack when lifted. And internal temp is 200-205. The meat just isn’t pulling back. They aren’t fall off the...

Ribs not pulling away from bone

These are the last two racks of ribs I cooked. You can see that the ends of the bones are barely visible. I’m used to a good 1/2” of bone sticking out by the time the ribs are done, and that used to be one of my methods for gauging doneness.

Ribs not pulling away from bone

I got my Rec Tec Bull about 3 weeks ago, so I’m still learning what works best with it. Everything has come out good so far. A little different than what I was making before, but still really good. I’ve found that the 3-2-1 method for ribs doesn’t work as well with pellets as it did with...

Steak for 8... what to get

I ended up cooking it last night instead of tonight. I would have preferred bone-in, but the moms wanted boneless. It was overpriced IMO, but tasted incredible. Unfortunately I’m now required to make this for all vacations.

Need advice on smoking ahead of time for work

I have a really big ice chest that I can put both SV cookers in to reheat. I’ve never done it that way, but it would at least have enough space. I’m thinking ribs, pulled pork, and brisket.

Need advice on smoking ahead of time for work

Next week, I’m going to try to barbecue a large amount for a work party. I don’t have any way to get my smoker to work, and I will probably need to smoke for a few days to make enough bbq for everyone. What’s the best way to prepare ahead of time and reheat? I have 2 Sous Vide cookers if vacuum...

So another one of those Why moments...

I did that for many years with my dog. Not that the raw chicken is the reason why, but he’s lived 4 years past the upper end of his breed’s usual life expectancy. As far as why the Sous Vide and then the grill... I tell my wife it’s because I can be a lot more flexible with timing than if I...

Chuck tender roast not so good

I wanted to try a chuck roast, but they were overpriced at the store. They did have chuck tender roast on sale, so I bought 2. Cooked one at 131 for 21 hours, then seared over charcoal. It came out great, at least as far as tenderness and doneness. It did not taste very good though. Pretty...

Steak for 8... what to get

Definitely on the list to try out.

Steak for 8... what to get

I decided to ask - everyone wants prime rib! Go figure. Easy enough, I’ve done that with the sous vide before.

Steak for 8... what to get

I’ve never tried one. I’ll look at some recipes for that.

Steak for 8... what to get

I probably should have explained the situation more. We will be at the beach, and there isn’t a grill. I have a little portable gas grill, but it will fit 4 steaks at a time at most. So I’m not cooking the whole time, I’d rather it be a large roast that can be cut into steaks after. If I had...

Steak for 8... what to get

I love ribeye, but I don’t find that prime rib really tastes like it for some reason. I guess if you cut it into steaks, seasoned it, and seared it like a steak. I did just read that there’s a strip steak equivalent of a rib roast, I think that may be what I get.

Steak for 8... what to get

I’ll have to try out eye of round, I can’t remember the last time I had one. I’m actually not a big fan of filet, I’d rather almost any other cut. But I should probably ask my wife if she likes it.

Steak for 8... what to get

My wife wants me to cook steak for Mother’s Day, which is awesome. I’ll need to make enough for 8 adults. There’s some logistical problems because of where we’ll be though. Is there a cut of meat similar to prime rib, but more “steak-like”? I love prime rib, but it’s more of an awesome roast...

    Now comes the wait...

I doubt that I’ll be disappointed, but I definitely spent more than I planned. Here’s how I talked myself up from buying a $170 electric smoker and a $300 gas grill to a $1200 pellet grill: Step 1) If I get an electric smoker and a gas grill, I’ll cook a lot more than using my charcoal smoker...

    Now comes the wait...

The Pit Boss seemed pretty nice, so if the REC TEC is all it’s cracked up to be, I will be impressed. I did buy 60 pounds of their pellets for about $25, so that’s a plus.

    Now comes the wait...

I ended up pulling the trigger on a REC TEC RT700. Hopefully the wait isn’t too awful, I’d like to be able to BBQ some stuff for mother’s day. I happened to go to the outdoor section of WalMart and saw a Pit Boss 700 for $400. Made me want to cry a little bit, but I’m hoping the REC TEC doesn’t...

    Debating getting a pellet smoker

The good thing is that she’ll most likely like the BBQ better off the pellet grill. She usually says my BBQ is too smoky for her.
Great deal on LEM Grinders!
