I really like my WSM and use it all the time. I would suggest you put something like this under your one touch and WSM...wood decks and hot ashes can lead to a bad day
Like a lot of folks I use the 3-2-1 method. cook indirect, at 250 or so. Put a nice dry rub on them and then cook 3 hours unwrapped, 2 hours wrapped in foil, and 1 hour unwrapped. Best to keep an eye on them and consider the timeline as flexible.
I would also vote for the WSM, the customer service is well worth the extra. It is well proven product with lots for folks using it, so you can get advice when need.
Sorry the old Fire Chief in me says not to do it. It was not built for woodburning and I doubt it was tested that way. You could get hurt or do damage to the smoker and the area around it
