    I'm usually a keep it guy, but since BGE hold heat so well if fully heated up, and it made it ah the way back to 75, suggests to me it never really heated up and want at 250 for that long. In absence of more info, I'd feed it to my dogs. 🙁

    In my experience, just rice flour alone struggles to brown very well. A little sugar and/or collagen helps being some color to the batter. If the batter has eggs and milk, a little less important, but they still help.

    Maybe I'm running my fire wrong... How open are your dampers. I'm usually running intake all the way open and stack about half closed. If I can close down dampers and still get clean fire, will the wood burn slower?

    Every hour to hour and a half sounds like a LONG time to me. I've always done wood only, but on my COS I generally added wood every 15 minutes. Offsets are a labor of love for sure. If you want to add just wood, you have to add small pieces often to keep the temperature spikes under control...

    Leg of lamb can also be smoked to fall apart tender. Another one folks won't expect, but super good. In the theme of lamb, lamb neck smoked till is wrapped then cooked till tender is my favorite. So moist and tender.
