    Try a chimney. So far so good for me in South Florida. Microwave pellet, torch them to get going, and loader couple inches out.

    AMNPS Rookie Mistakes

    Did my second attempt yesterday with my amnps. Everything was perfect. Did chicken breasts and thigh and I have to say it was the best chicken I ever ate. It was still smoking so I shut it down, let it cool, and smoked some parmasan cheese.

    Make sure to drink plenty of cold beer while smoking, and also I find when I sit and stare at mine, that help as well.

    Very interesting. I am in the market for another thermometer . Love my maverick 733 for smoking, but want one for the grill. It's funny, I never used a thermometer before I got my smoker. My buddy makes fun of me cause he "just knows" when his meat done. His last cook he admitted he over did it...

    I had the same issue, it is humidity. Microwave the pellets first. Should get the moisture out.

    thanks. I can eat it even more rare, but my wife is one of "those" people that thinks it is under cooked. It was tender and flavorful though!

    Thanks Bear. I'm glad I went on instinct and Probed at 2 pm. Was already almost done. Thank you so much for the step by step. I use all the advice as a starting point and go by my gut. No 2 pieces of meat cook the same. Much thanks Red!

    Mine went out at some point on my last smoke, but I did have the water pan in, with some water. I also did not microwave the pellet before using. Going to try those 2 things next time

    Thanks guys! It was a hit. All the leftovers are gone, I think it tasted better today, lol. I also did corn on the cob in the grill. So good.
