I'm not here to get in to a discussion on whether or not someone should buy incandescent bulbs or not. I am just saying that finding many things in a store is hard to do these days. I buy enough on Amazon that the Prime membership easily pays for itself, and I don't have to look for free...
Try buying an incandescent light bulb at Home Depot. Good luck. But, I can get them on Amazon for the same price and, yes, free shipping in a day or so.
I'll stick with Amazon.

It is awesome that in Hawaii you can get prime brisket, but here in the Chicago area, I can only get choice from Costco. Maybe in the past week they have prime.
I was making great brisket on a cheap Char-Broil offset for about 15 years. Upgraded 3 years ago to a great Bell Fab and quickly fell victim to You Tube. Don't over think. I did. When I went back to no probes, feel, and the art of it, and super long hold times, I went back to great brisket.

I'll put in my usual plug for Craig Bell near Tulsa and Bell Fab. Thick steel, well made, not any pricier than an Old Country, well, maybe a couple hundred bucks, and he will basically build it to your specs with suggestions along the way.
Pretty unusual to have a nicer, tender flat and tough point. I'll take your word for it even though the pics look good.
As mentioned, 30 minutes is inadequate rest time. And, also as stated, make sure you flip the point 90° before slicing and go against the grain. Maybe you did, hard to tell...
I did not remove the baffle in mine. I had tuning plates. I don't use them now. I was over thinking. This pit is easy to figure out and run and has tons of convection. I see no reason, for me, to remove that baffle.
