I finally came to a conclusion

Yeah, I am not aware of any the great barbecue joints using anything other than wood for barbecue.

Is Amazon Prime still a good deal ?

I'm not here to get in to a discussion on whether or not someone should buy incandescent bulbs or not. I am just saying that finding many things in a store is hard to do these days. I buy enough on Amazon that the Prime membership easily pays for itself, and I don't have to look for free...

Is Amazon Prime still a good deal ?

Try buying an incandescent light bulb at Home Depot. Good luck. But, I can get them on Amazon for the same price and, yes, free shipping in a day or so. I'll stick with Amazon.

    My Saturday Smoke!

    Nope, looks good.

    My Saturday Smoke!

Looks great. It is awesome that in Hawaii you can get prime brisket, but here in the Chicago area, I can only get choice from Costco. Maybe in the past week they have prime.

    Costco Prime Briskets

Can't get a prime brisket at the Costcos in my area for several months now. Choice at $4.29/lb a few days ago when I checked.

What have you learned that really took your briskets to the next level?

I was making great brisket on a cheap Char-Broil offset for about 15 years. Upgraded 3 years ago to a great Bell Fab and quickly fell victim to You Tube. Don't over think. I did. When I went back to no probes, feel, and the art of it, and super long hold times, I went back to great brisket.

    Anyone hear from TNjake?

Thanks for the post. He and I have had a PM string going since I joined. He PMd me because of the Bell Fab connection. I saw he hasn't posted since April, and I haven't heard from him on the PM string. Hope he's okay.

    Offset Smoker Upgrade

I'll put in my usual plug for Craig Bell near Tulsa and Bell Fab. Thick steel, well made, not any pricier than an Old Country, well, maybe a couple hundred bucks, and he will basically build it to your specs with suggestions along the way.

    Brisket Advice Needed Please

Pretty unusual to have a nicer, tender flat and tough point. I'll take your word for it even though the pics look good. As mentioned, 30 minutes is inadequate rest time. And, also as stated, make sure you flip the point 90° before slicing and go against the grain. Maybe you did, hard to tell...

    Beef Brisket - Need Guidance

10 pound brisket, so if that was before trimming, 6 hours sounds about right.

    Bell Fabrication Smokers

I did not remove the baffle in mine. I had tuning plates. I don't use them now. I was over thinking. This pit is easy to figure out and run and has tons of convection. I see no reason, for me, to remove that baffle.

Mine is 48. I would say definitely get that larger one if it is in the budget.

    Bell Fabrication Smokers

Agreed. They probably work well, but at a cost.

    Bell Fabrication Smokers

No opinions really. A lot of people seem to like them.

    Best Knife to cut Brisket

Yep, it will ultimately come down to personal preference here.

    Best Knife to cut Brisket

Will likely get many varied responses here. This is what I have used. I also have used a non-serated knife like this for the brisket.

    Bell Fabrication Smokers

I don't recall Craig ever suggesting to me to cook my brisket fat side down.
