    I've been skipping my water pan as I find I lose too much heat to it, and burn more charcoal. The longest smoke I could do with my 22.5" WSM while using the water pan was about 7 hours long, but, most likely I'm doing something wrong.     Sometimes you just can’t beat charcoal.

    The Pennsylvania members should try marinading chicken in Gazebo Room Greek salad dressing. Not sure if it's found in other states, but you may be able to order it from Amazon or Walmart's web site. Pour about half of the oil off though, as it flames up.

    Weber kettle refurb.

    Not so sure the grill paint will stick on a ceramic surface... but then again, I've been known to be wrong before. Spray it with Simple Green, scrub a little with a brush, hose it down and run it. What's the inside look like?

    Ash wood.

    I've never used ash personally, but everyone around here uses oak to get a nice flavor to their smoked meats. From some friends of mine, it produces a flavor between oak and hickory depending on the type of ash tree, and is good with fish and red meat.

    Pork spares or baby backs
