    I would expect it will be ok. What will matter IMHO is what temp was the smoker at when you put it in and what was the temp of the outer layer of meat when you put it into the over. Also, you might want the over to be set a bit higher than the smoker (maybe 325) for an hour or so to kill...

    You make a good point. But, seeing what's cooking, how it is getting color, is it drying out, is it falling through the grates, is all good for my peace of mind. Besides, I have to get up to check it and that is why I got another beer or glass of wine while I was up.
